INGREDIENTS & STEPS:

  • 1 ripe banana

  • 2 eggs

  • 1/8 teaspoon baking powder

  • A pinch of salt

  • Blend above ingredients together well and pour small pancakes in a pan with coconut oil or ghee.

  • Serve with some delicious organic 100% real maple syrup and some fruit on the side!

You will never miss the flour!

So what's the secret to this healthy, creamy, whole-foods version of green bean casserole??

I found this recipe because I have always loved green bean casserole as a kid. But since I need to eat a gluten free and dairy free diet I had to find another recipe. I love this recipe the most because it uses cashews that have been soaked which helps the nutrients to be unlocked and your body to better absorb them. I use all the substitutions suggested to follow the gluten free diet. I also try and use fresh green beans, I find they have a little better texture than frozen ones.

Pancakes are delicious and are great for a special occasion, but for a normal week they are a lot of work. So my genius partner turned them into muffins and makes them every Sunday so we have them for the week ahead. They are great pre/post workout snacks or perfect at night as a healthy dessert treat.
