It’s getting closer to the time when we start to break out the pumpkin pies (a personal favorite), ice cream, turkey with stuffing and many other calorie and fat packed goodies we love to eat around the holidays. This usually throws us off of our training schedules and can even cause some people to spiral out of control further into the New Year. So what can you make that is mostly locally grown and organic to help keep you on track but will still dazzle any guests you have? Try these fantastic prosciutto wrapped figs. Figs have two seasons, one in June and one in August so they are usually available into early winter. You can serve them as an appetizer or even after diner as an alternative to a super calorie and fat packed dessert since they are a bit sweet.

PROSCIUTTO WRAPPED FIGS

This is a family favorite that can be served as an appetizer.

1 .Take locally grown organic figs, cut in half, and scoop out the middle and place this in a sauce pan with a teaspoon of organic honey. Heat for about 5 – 10 minutes until warm.

2. Stuff each fig half with either goat cheese or feta cheese (feta cheese would be the healthier option).

3. Put the halves of the fig together, wrap a piece of prosciutto around it and hold together with a toothpick.

4. Place whole figs on a cookie sheet or on grill and drizzle contents in the bowl onto each fig.

5. Cook for 10-15 minutes until inside is slightly warm and enjoy! These babies will go quick and are slightly sweet so can be used as an after dinner delight.
